  • 3 tablespoons kirsch or cherry liqueur (optional)
  • 4 cups fresh pitted cherries or 2 cans (14.5 oz each) dark sweet cherries in light syrup, drained (reserve 1/4 cup syrup)
  • 1/3 cup granulated sugar (reduce to 2 tablespoons if using canned cherries)
  • 2 tablespoons cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 3 cups heavy whipping cream, chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz mascarpone cheese, room temperature
  • 1 cup chocolate shavings
  • 12 fresh cherries with stems for garnish
  • 2 tablespoons grated chocolate for garnish

Instructions

  1. Prepare the Cherry Layer: Combine cherries, sugar, and water in a saucepan. Mix cornstarch with water, add to cherry mixture once juices release. Cook until thickened. Stir in extracts and cool completely.
  2. Prepare the Cream Layer: Whip heavy cream with powdered sugar and vanilla until firm peaks form. Whisk mascarpone separately, then fold in whipped cream.
  3. Prepare the Cake Layer: Cut chocolate cake into 1-inch cubes. Sprinkle with kirsch if using and let absorb for 5 minutes.
  4. Assemble the Trifle: Layer half the cake cubes in trifle dish, top with half the cherry mixture, then a third of the cream mixture and a third of chocolate shavings. Repeat layers, finishing with final third of cream and remaining chocolate shavings.
  5. Garnish and Chill: Decorate with fresh cherries and additional chocolate. Cover and refrigerate for at least 4 hours, preferably overnight. Remove from refrigerator 15 minutes before serving.

Notes

  • For a non-alcoholic version, substitute kirsch with 2 tablespoons cherry juice mixed with 1 teaspoon almond extract
