- 4 bone-in pork chops (1-inch thick)
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup chicken broth
- 1 packet onion soup mix
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- 2 tablespoons cornstarch
- 1/4 cup water
- Fresh parsley for garnish (optional)
Instructions
- Season both sides of pork chops generously with salt and freshly ground black pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 2-3 minutes per side until golden brown.
- In the same skillet, sauté sliced onions for 2-3 minutes until translucent. Add minced garlic and cook for another 30 seconds until fragrant. Transfer to crock pot.
- In a mixing bowl, whisk together cream of mushroom soup, chicken broth, onion soup mix, dried thyme, and smoked paprika until well combined.
- Place seared pork chops on top of the onion mixture in the crock pot. Pour the gravy mixture evenly over the pork chops.
- Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
- About 30 minutes before serving, mix cornstarch with water to create a slurry. Stir into the crock pot, replace lid, and cook on HIGH for the remaining time.
- Allow to rest for 10 minutes with the lid off before serving. Garnish with fresh parsley if desired.

- For best results, sear the pork chops before adding to the slow cooker to enhance flavor.
- Boneless pork chops can be substituted, but reduce cooking time by 30 minutes.
