  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced

  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 packet onion soup mix
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • Fresh parsley for garnish (optional)

Instructions

  1. Season both sides of pork chops generously with salt and freshly ground black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 2-3 minutes per side until golden brown.
  3. In the same skillet, sauté sliced onions for 2-3 minutes until translucent. Add minced garlic and cook for another 30 seconds until fragrant. Transfer to crock pot.
  4. In a mixing bowl, whisk together cream of mushroom soup, chicken broth, onion soup mix, dried thyme, and smoked paprika until well combined.
  5. Place seared pork chops on top of the onion mixture in the crock pot. Pour the gravy mixture evenly over the pork chops.
  6. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
  7. About 30 minutes before serving, mix cornstarch with water to create a slurry. Stir into the crock pot, replace lid, and cook on HIGH for the remaining time.
  8. Allow to rest for 10 minutes with the lid off before serving. Garnish with fresh parsley if desired.
