Ingredients
Scale
- 1 pound lean ground beef (90/10 recommended)
- 1 medium yellow onion, finely diced (about 1 cup)
- 1 green bell pepper, finely diced (about ¾ cup)
- 3 cloves garlic, minced (about 1 tablespoon)
- 1 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon yellow mustard
- 1 teaspoon apple cider vinegar
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
- Salt and black pepper to taste
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese, divided
- 1 cup shredded Monterey Jack cheese, divided
- Chopped green onions for garnish
- Fritos, tortilla chips, or toasted baguette slices for serving
Instructions
- Preheat oven to 350°F (175°C). Brown ground beef in a large skillet over medium-high heat for 5-7 minutes, breaking it into small crumbles.
- Drain excess fat, leaving about 1 tablespoon. Add diced onions and bell peppers and sauté until softened, about 4-5 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
- Reduce heat to medium-low and add ketchup, brown sugar, Worcestershire sauce, mustard, vinegar, chili powder, smoked paprika, and cayenne pepper. Stir to combine and simmer for 5-7 minutes until slightly thickened.
- Remove from heat and stir in softened cream cheese until completely melted and incorporated. Add half of both the cheddar and Monterey Jack cheeses, stirring until melted and smooth.
- Transfer mixture to a 9-inch pie plate or 2-quart baking dish. Sprinkle remaining cheese evenly over the top.
- Bake for 15-20 minutes until cheese is melted, bubbly, and beginning to brown at the edges. For an extra golden top, broil for the final 1-2 minutes, watching carefully to prevent burning.
- Remove from oven and let stand for 5 minutes. Garnish with chopped green onions and serve immediately with chips or toasted bread.
Notes
- For a leaner version, substitute ground turkey or chicken for beef.
- Make dairy-free by using plant-based cream cheese and non-dairy shredded cheese.
- Add diced jalapeños for extra heat or more smoked paprika for deeper flavor.
- The dip can be prepared up to 2 days in advance, then assembled and baked just before serving.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- For freezing, prepare through step 4, freeze for up to 2 months, then thaw overnight before baking.
- To keep warm during parties, use a small slow cooker on the ‘warm’ setting.
