- 1 bay leaf
- 2 large carrots, sliced into 1/2-inch pieces
- 8 ounces mushrooms, quartered
Instructions
- Season the flour with salt and pepper in a shallow bowl. Toss the beef cubes in the seasoned flour until lightly coated.
- Heat olive oil in a large skillet over medium-high heat. Working in batches, quickly brown the beef cubes on all sides, about 1-2 minutes per batch.
- Transfer the seared beef to your slow cooker. Add the diced onions, minced garlic, carrots, and mushrooms.
- In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, and brown sugar until well combined. Pour this mixture over the beef and vegetables.
- Add the dried thyme and bay leaf to the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is fork-tender.
- About 15 minutes before serving, taste and adjust seasoning as needed. If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker. Cook on high for an additional 15 minutes.
