Instructions

  1. Season the flour with salt and pepper in a shallow bowl. Toss the beef cubes in the seasoned flour until lightly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Working in batches, quickly brown the beef cubes on all sides, about 1-2 minutes per batch.
  3. Transfer the seared beef to your slow cooker. Add the diced onions, minced garlic, carrots, and mushrooms.
  4. In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, and brown sugar until well combined. Pour this mixture over the beef and vegetables.
  5. Add the dried thyme and bay leaf to the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is fork-tender.
  6. About 15 minutes before serving, taste and adjust seasoning as needed. If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker. Cook on high for an additional 15 minutes.
